BRANDI'S KETO CHOCOLATE CHIP COOKIES
yield: 36 cookies
- 2 1/2 c Almond Flour
- 1 1/4 c Coconut Flour
- 1/4 c Whey Protein ( I use vanilla flavored)
- 1 tsp Baking Soda
- 1 tsp Salt
- 2 sticks of Butter Softened and cut up
- 1 1/4 c Lankato Brown Sugar
- 1/4 c Lankato Granulate Sugar
- 2 Large Eggs (room temperature)
- 2 1/2 tsp Vanilla
- 9oz Lilly's Dark Chocolate Chips
Preheat oven to 300 degrees.
In a medium bowl, combine Almond FLour, Coconut Flour, Whey protein, Baking Soda and salt.
In an electric mixerplace butter. Mix on high untily butter is fully softened.
Add sweetners to butter and mix on high until combined. Add eggs and vanilla and mix on medium until combined.
Slowly (very important) add dry ingredients (I add a 1/4 cup at a time).
Stir in chocolate chips
Make dough into 1 inch balls and place on a lined cookie sheet. Press down slightly
Bake for 16-18 minutes. Cookies might look under baked. Allow them to cool on the baking sheet - they will finish baking while cooling
