POTATO PANCAKES
yield: 32 pancakes
- About 2 large potatoes, 2 cups grated or mashed
- 1/4 cup Onion, minced
- 1 Egg, beaten
- 1 cup Milk
- 3 tbsp Butter, melted
- 3/4 cup Biscuit Mix
- 1/4 tsp Salt
Grate pared potatoes (using a fine grater); add remaining ingredients and mix well.
Using about two tablespoons of batter for each Potato Pancake, cook on medium heat on an ungreased griddle until brown; turn once.
Serve hot
Suggestion: Serve with sour cream and applesauce.
