Loaded Cauliflower Casserole
yield: 6-8 Servings
- 2 lbs cauliflower florets
- 8oz sharp cheddar cheese, shredded
- 8oz monterey jack cheese, shredded
- 8oz block of cream cheese softened
- 4 tbsp heavy cream
- 2 bunches of green onions chopped
- 6 slices of bacon cooked and crumbles
- 1 clove garlic grated
- salt & pepper to taste
Preheat oven to 350 degrees
steam cauliflower florets until tender
cream together 6oz cheddar cheese and 6oz monterey jack cheese, cream cheese and heavy cream
stir in sliced green onions, chopped bacon and garlic. set aside
drain any liquid from steamed cauliflower and add to cheese mixture. stir
Pour into a 2-3 quart casserole and sprinkle remaining cheese on top. Cover with foil and bake fore 25 mintes. Remove foil and bake until cheese is golden brown and bubbly
Suggestion: add vegetables to load it up! For a finer texture, give a few mashes
