PECAN SANDIES
yield: 36 Cookies
- 1 cup margarine softened
- 1 cup vegetable oil
- 1 cup white sugar
- 1 cup confectioners' sugar
- 2 eggs
- 1 tsp vanilla
- 4 cup all purpose flour
- 1 tsp baking soda
- 1 tsp cream of tartar
- 1 tsp salt
- 2 cups pecan meal
- 1/2 cup confectioners' sugar for decoration
Preheat oven to 375 degrees
In a large bowl, cream together margarine, oil, white sugar and confectioners' sugar until smooth.
Beat in eggs, one at a time, then stire in vanilla.
Combine flour, baking soda, cream of tartar and salt; stir into the creamed mixture.
Mix in pecan meal.
Roll dough into 1 inch balls and place on cookie sheet 2 inches apart.
Bake for 10 to 12 minutes in the over or until edges are golden brown.
place on wire racks to cool and sift with confectioners sugar
Suggestion: Place whole pecans on top for decoration
