HAM RICE ASPARAGUS SALAD

- 4 tbsp Balsamic Vinegar
- 2 cloves Garlic slightly chopped
- 2tbsp chopped fresh Thymer or 2 tsp dried Thyme
- 2 tsp Ground Black Pepper
- 1/2 c Olive Oil
- 1 1/2 c Raw Basmati Rice (cooked to directions - not instant)
- 1 tsp Salt
- 1/2 lb or more Asparagus
- 1/2 lb Lean Ham diced
- 1/3 c Green Onion chopped
Dressing - Mix first 5 ingredients and whisk oil in to a thin stream. Let stand for 2 hours or more. Remove Garlic.
Cook Rice and cool to room temperature
Blanch asparagus and cut into 1 inch pieces
Mix all ingredients into a bowl. Serve at room temperature.
Salt and Pepper to taste
Suggestion: Great for potlucks and picnics
