German Potato Salad
yield: large pot
- 6 slices bacon diced
- 2 carrots diced
- 1 bunch of broccoli
- 5 potatoes peeled
- 1 stick butter
- 1 onion diced
- 2 stalk celery
- 2 qts water
- 1 Tbsp chicken base
- fresh parsley
- 3 cup instant mashed potato flakes
Saute onions and bacon for 10 minutes.
Place in soup pot with vegetables, water and salt.
Add chicken base, boil for 40 minutes
Add potatoes, cook until potatoes are soft
Stir in parsley, butter and potato flakes slowly.
Cook for 5 more minutes, Adjust seasoning.
Suggestion: Smoked Sausages add a little extra.
