Cranberry Apple Pudding

CRANBERRY APPLE PUDDING

yield: 8 servings

  • 1 cup sifted all-purpose flour
  • 1 tsp soda
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/4 cup Butter
  • 1 Egg
  • 1 cup unpleeled, grated apple
  • 1 cup fresh whole cranberries
  • 1 tsp grated orange rind
  • 1/2 cup chopped nuts
  • 1 cup sugar

Combine flour, soda, cinnamon, nutmeg and salt; set aside.

Cream butter until fluffy; beat in sugar and eggs.

Stir in apple, cranberries and orange rind.

Mix in dry ingredients and nuts.

Turn into well-greased 6-cup ring mold.

Bake on 325 in over for 1 hour.

Suggestion: Server with Brandy-Butter Sauce. To make place 1/2 cup butter, 1 cup sugar and 1/2 cup light cream in a saucepan, mixing well. Heat until well blended and slightly thickened. DO NOT BOIL. Remove from heat; stir in 2 tbsp brandy or 1 tsp brandy flavoring. Serve warm over pudding..
