Bell Pepper Nachos
yield: 4 Servings
- 1 lb lean ground turkey
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp black pepper
- 1/4 tsp salt
- 3/4 cup salsa
- 1 cup grated cheddar cheese
- 3 bell peppers
Preheat oven to 375 degrees.
Slice peppers into 6 verticle peices - removing seeds
Cook ground turkey over medium high heat breaking it up as it cooks. Cook until turkey looses its pink color and is cooked through. Drain any fat
Combine turkey with spices and salsa. Evenly distrubte mixture into the bell pepper boats.
Top with cheese
Bake on a parchment paper lined baking sheet for 10 minutes until cheese is melted
Suggestion: add sliced jalepeno peppers, avocado, sour cream or green onions for additional flavors.
