Carrot Cake

yield: 1 cake

  • 2 cup sugar
  • 1 1/4 cup oil
  • 4 Large eggs
  • 2 cups flour
  • 2 tsp baking soda
  • 1 Tbsp cinnamon
  • 1 tsp vanilla
  • 2 tbsp butter
  • 1 tsp salt
  • 3 cups grateed carrots
  • 1 cup chopped walnuts
  • 16oz powdered sugar
  • 8oz cream cheese
  • 2 tbsp milk

Preheat oven to 350 degrees.

In large bowl beat sugar and oil. Add eggs and beat well.

Sift flour, soda, cinnamon and salt into egg mixture; mix well; fold in carrots and nuts

Place batter in a greased 9x13 inch pan.

Bake for 45 minutes

FROSTING: Beat together powdered sugar, cream cheese, vanilla, butter and milk; spread on cooled cake

Suggestion: with ice cream.
