APPLE CUSTARD SQUARES RECIPE
yield: 20 squares
- 1 cup Flour
- 1 cup Sugar
- 3/4 tsp Baking Powder
- 1/4 tsp Cinnamon
- 2 3/4 cup Rice Chax, crushed
- 1 cup + 2 tbsp Butter
- 3/4 cup Sugar
- 1/4 cup Flour
- 1/8 tsp Cinnamon
- 2 Eggs
- 1 (16oz) Sour Cream
- 1 tsp Vanilla
- 3 cups Apples, chopped
Preheat oven to 400 to prepare base
Mix flour, sugar, baking powder, cinnamon and crushed rice chex. Cut in butter until mixture resembles fine crumbs.
Remove 1/2 cup and set aside. Press remaining mixture into a 9 x 13 pan.
Bake for 5 minutes
Prepare filling - combine sugar, flour, cinnamon.
In another bowl combine eggs, sour cream and vanilla.
Add flour; Mix well. Stir in apples.
Pour over crust.
Bake 10 minutes. Sprinkle with Crumbs.
Reduce heat to 350 and bake an additional 20 to 25 minutes.
