BEEFY MEXICAN LASAGNA RECIPE

- 1 lb Ground Beef
- 1 can (16oz) whole tomatoes, cut up
- 1 package Taco Seasoning
- 1 can (2.8 oz) French Fried Onions
- 1 (12oz) Cottage Chese
- 1 1/2 cup Shredded Chedder Cheese
- 2 Eggs, slightly beaten
- 12 Flour Tortillas
- 1 Tomato, chopped
- Shredded Lettuce
In a large skillet, brown beef; drain.
Add canned tomatoes and taco seasoning; simmer, uncovered for 5 minutes.
Stir in 1/2 can French Fried Onions.
In a bowl, combine cottage cheese, 1 cup cheddar cheese and eggs.
Place 3 tortillas on the bottom of a greased 8x 12 inch baking dish. Overlap 6 tortillas around sides of the baking dish. Spoon meat mixture evenly in dish. Top with 3 tortillas and then cheese mixture.
Bake, covered, at 350 for 45 minutes.
Sprinkle with remaining cheese. Place remaining onions in the center and bake uncovered for 5 minutes longer.
Suggestion: Before serving arrange tomatoes, lettuce, avocados and sour cream on top.
